INGREDIENTS
200g Cauliflower
2 large Egg Whites
3 oz Low-Fat Fresh Mozzarella
1/2 cup Tomato Sauce
8 Fresh Basil leaves
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Process the cauliflower florets in a food processor until they reach a rice-like consistency. Transfer the cauliflower rice into a microwave-safe bowl and microwave for 4-5 minutes until softened. Let it cool slightly, then place in a clean towel and squeeze out excess moisture.
In a mixing bowl, combine the drained cauliflower rice with egg whites, a pinch of salt and pepper. Mix until a dough-like consistency forms. Press the mixture onto a parchment-lined baking sheet, forming a thin, even circle to create your pizza crust.
Bake the crust in the preheated oven for 12-15 minutes until it starts turning golden and firm.
Remove the crust from the oven and evenly spread the tomato sauce over the base. Tear the low-fat mozzarella into small pieces and scatter them on top of the sauce.
Return to the oven and bake for an additional 5-7 minutes until the cheese is softly melted.
Garnish with fresh basil leaves before serving. Season with additional salt and pepper if desired.
