PREPARATION
Preheat your panini press or skillet over medium heat.
Spread 1 tablespoon of basil pesto evenly on one side of each slice of whole wheat bread.
Layer the turkey breast slices on one slice of bread, followed by fresh mozzarella cheese and tomato slices.
Top with the second slice of bread, pesto side down.
Place the assembled sandwich on the panini press or skillet. If using a skillet, press down slightly with a spatula.
