INGREDIENTS
1 piece Chicken Breast (170g)
1 cup Fresh Spinach (30g)
1 oz Feta Cheese (28g)
1 tsp Olive Oil (4.5g)
1 clove Garlic, minced
2 tbsp Greek Yogurt (30g)
3 tbsp Fresh Herbs (Parsley, Dill, Basil, 9g)
1 tsp Lemon Juice (5g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Using a sharp knife, carefully slice a pocket into the side of the chicken breast without cutting all the way through.
In a small bowl, combine the fresh spinach, crumbled feta cheese, and minced garlic. Season lightly with salt and pepper.
Stuff the spinach-feta mixture into the pocket of the chicken breast, pressing gently to secure the filling.
Heat a teaspoon of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breast on both sides until golden, about 2-3 minutes per side.
Place the skillet in the preheated oven and bake for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F.
Meanwhile, prepare the herb sauce by mixing the Greek yogurt, fresh herbs, and lemon juice in a small bowl. Adjust seasoning with salt and pepper.
Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving. Drizzle or serve the herb sauce on the side.
