INGREDIENTS
3 ounces Pulled Pork
150 grams Sweet Potato
1/4 cup Black Beans
20 grams Reduced-Fat Cheddar Cheese
1 Jalapeño
1 tbsp Lime Juice
1 tbsp Cilantro
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Thinly slice the sweet potato into chip-like rounds, then toss with a teaspoon of olive oil, salt, and pepper. Spread the slices evenly on a baking sheet.
Bake the sweet potato slices for around 20-25 minutes or until crispy, flipping halfway through.
While the chips are baking, lightly warm the pulled pork in a pan over medium heat. Season with salt and pepper if desired.
Once the chips are done, spread them on a serving plate. Top with warmed pulled pork, black beans, and sprinkle the reduced-fat cheddar cheese evenly.
Finely chop the jalapeño and cilantro. Drizzle the lime juice over the nachos and garnish with chopped jalapeño and cilantro.
Serve immediately and enjoy your flavorful, balanced meal.
