Enjoy a fiery twist on a classic pasta dish with lean chicken, spicy chorizo, whole wheat penne, and a vibrant fire-roasted tomato sauce. The medley of flavors and textures makes this meal both satisfying and balanced for any time of day.
INGREDIENTS
3 oz Chicken Breast
1 oz Chorizo Sausage
1/2 cup Whole Wheat Penne Pasta (cooked)
1/2 cup Fire-Roasted Tomato Sauce
1 tsp Olive Oil
1/4 medium Yellow Onion
2 cloves Garlic
1/4 tsp Crushed Red Pepper Flakes
Salt & Black Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat penne according to package instructions until al dente, then drain and set aside.
While the pasta cooks, heat olive oil in a skillet over medium heat. Sauté the finely diced onion until soft and translucent, about 2-3 minutes.
Add minced garlic and crushed red pepper flakes to the skillet and cook for another 30 seconds until fragrant.
Add sliced chorizo sausage to the skillet and cook for another 2 minutes until it starts to render its fat.
Cut the chicken breast into bite-sized pieces, season with salt and pepper, and add to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Pour in the fire-roasted tomato sauce, stir to combine, and let simmer for 3-4 minutes to meld the flavors.
Toss in the cooked penne pasta until evenly coated with the sauce and ingredients.
Adjust seasonings with salt and pepper as needed, then serve hot.
