INGREDIENTS
6 oz Salmon Fillet (170g)
1/2 cup cooked Brown Rice (100g)
6 spears Asparagus (84g)
1 tsp Olive Oil (4.5g)
Pinch of Salt
Pinch of Black Pepper
1 tbsp Lemon Juice (15g)
PREPARATION
Rinse the salmon fillet and pat dry with a paper towel. Season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the teaspoon of olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes. Flip and continue cooking for an additional 3-4 minutes, or until the salmon is just cooked through and flakes easily.
While the salmon cooks, bring a small pot of water to a simmer and add the asparagus spears. Steam the asparagus for about 4-5 minutes until tender but still crisp. Drain and set aside.
Reheat the pre-cooked brown rice if needed, or warm it in a small pot with a splash of water over low heat until heated through.
Drizzle lemon juice over the seared salmon for an extra burst of flavor.
Plate the salmon alongside the steamed asparagus and brown rice. Serve immediately and enjoy!
