200 grams Firm Tofu
0.75 cup Shelled Edamame
1 cup Broccoli
0.5 cup Zucchini
1 tsp Sesame Oil
1 tsp Sesame Seeds
1 tsp Fresh Ginger, grated
1 Garlic clove
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
PREPARATION
Preheat the oven to 400°F.
Press the tofu for 10-15 minutes to remove excess water. Once pressed, cut tofu into bite-sized cubes.
In a bowl, whisk together sesame oil, soy sauce, rice vinegar, grated ginger, and minced garlic.
Gently toss the tofu cubes in half of the sauce mixture to coat evenly.
Spread the tofu cubes on a baking sheet lined with parchment paper and lightly roast in the oven for 20-25 minutes until edges are crispy.
Meanwhile, chop broccoli into florets and slice zucchini into half-moons. Toss the vegetables in any remaining sauce.
Spread the vegetables on a separate baking sheet and roast for about 15-20 minutes until tender and charred in spots.
Once tofu and vegetables are roasted, gently toss them together and garnish with sesame seeds.
