INGREDIENTS
6 oz Sirloin Steak
1 tsp Unsalted Butter
1 Garlic Clove
2 tbsp Fresh Parsley
1 tsp Fresh Thyme
100 g Baby Potatoes
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) for roasting the potatoes.
Toss the baby potatoes with olive oil, salt, and pepper, and spread them out on a baking sheet.
Roast the potatoes in the preheated oven for about 25-30 minutes until golden and tender, stirring halfway through.
While the potatoes roast, pat the steak dry and season both sides generously with salt and pepper.
Heat a skillet over medium-high heat. Once hot, sear the steak for about 3-4 minutes on each side for medium-rare, adjusting time to your preferred doneness.
In the last minute of cooking, add the unsalted butter, garlic clove (crushed), parsley, and thyme to the pan. Spoon the herb-garlic butter over the steak as it finishes cooking.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
Plate the sliced steak with a side of roasted baby potatoes and drizzle any remaining herb butter over the top.
