INGREDIENTS
400g Extra-Firm Tofu
1 cup Broccoli (chopped)
1 medium Red Bell Pepper
1/2 cup Snow Peas
1 medium Carrot
1 tbsp Sesame Seeds
1 tsp Fresh Ginger, minced
2 cloves Garlic, minced
2 tbsp Low-Sodium Soy Sauce
1 tbsp Rice Vinegar
1 tsp Maple Syrup
1 tsp Sesame Oil
1 tsp Vegetable Oil
PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, whisk together the soy sauce, rice vinegar, maple syrup, sesame oil, minced ginger, and garlic to create the marinade.
Gently toss the tofu cubes in the marinade and let sit for 10-15 minutes.
While marinating, prepare the vegetables by chopping the broccoli, slicing the red bell pepper, julienning the carrot, and trimming the snow peas.
Heat the vegetable oil in a non-stick skillet or wok over medium-high heat. Add the marinated tofu and stir-fry until the edges are crispy and golden, around 5-7 minutes.
Add the vegetables to the skillet and continue stir-frying for another 3-4 minutes until they are tender-crisp.
Sprinkle sesame seeds over the stir-fry, toss gently to combine, and remove from heat.
Serve immediately and enjoy your flavorful, nutrient-packed meal.
