INGREDIENTS
300g White Mushrooms
4 oz Medium Shrimp (peeled and deveined)
1 tbsp Butter
3 cloves Garlic
2 tbsp Fresh Mixed Herbs (Parsley & Thyme)
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C).
Clean the mushrooms with a damp cloth and slice them if desired.
In an ovenproof skillet, melt the butter over medium heat. Add finely minced garlic and sauté until fragrant, about 1 minute.
Add the mushrooms to the skillet and season with salt and pepper. Toss them in the garlic-butter mixture to ensure they are well coated.
Transfer the skillet to the preheated oven and roast the mushrooms for 12-15 minutes, stirring halfway through for even cooking.
While the mushrooms are roasting, heat olive oil in a separate pan over medium heat and add the shrimp. Sauté for 2-3 minutes on each side until they turn pink and are cooked through. Season lightly with salt and pepper.
Once the mushrooms are roasted, remove the skillet from the oven and stir in the fresh mixed herbs.
Plate the garlic-butter roasted mushrooms and top or serve alongside the sautéed shrimp. Enjoy immediately.
