Enjoy a vibrant dinner featuring a perfectly seared salmon fillet paired with velvety sweet potato mash and garlicky green beans. The dish strikes a delightful balance of savory seafood richness and the natural sweetness of mashed sweet potato, complemented by crisp green beans sautéed with fragrant garlic.
INGREDIENTS
5 oz Salmon Fillet
1 large Sweet Potato (approx. 200g)
1 cup Green Beans
2 tsp Olive Oil
1 clove Garlic
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick pan over medium-high heat and add 1 teaspoon of olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side until a golden crust forms and the fish is nearly cooked through.
Meanwhile, peel and dice the sweet potato. Boil or steam the diced sweet potato until tender (about 10-15 minutes). Drain and mash with a fork or potato masher. Mix in half the minced garlic (or finely crushed garlic clove) and season with salt and pepper.
Trim the ends of the green beans. In a separate skillet, heat the remaining 1 teaspoon of olive oil over medium heat. Add the remaining minced garlic and sauté until fragrant, then add the green beans. Cook for about 4-5 minutes, stirring occasionally, until the beans are crisp-tender.
Plate the salmon alongside a generous serving of sweet potato mash and garlic green beans. Serve immediately with an optional garnish of fresh herbs if desired.
