1/4 Mango (diced)

1 tsp Olive Oil
PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Pat dry the mahi mahi fillet and season lightly with salt and pepper. Dredge the top side of the fillet in the finely crushed pistachios pressing gently to adhere.
Place the fillet, pistachio side down, in the heated skillet and cook for about 3-4 minutes until the crust is golden and crisp. Flip carefully and cook the other side for an additional 3 minutes or until the fish is opaque and flakes easily.
