INGREDIENTS
200g Firm Tofu
1 cup Broccoli
1/2 cup Bell Pepper (chopped)
1/2 cup Snap Peas
1/2 cup Shelled Edamame
1 tsp Sesame Oil
1 tsp Fresh Ginger (grated)
1 Garlic clove
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Toasted Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
In a small bowl, whisk together sesame oil, grated ginger, minced garlic, low-sodium soy sauce, and rice vinegar to form the marinade.
Gently toss the tofu cubes in half of the marinade, ensuring all pieces are evenly coated.
Heat a non-stick skillet over medium-high heat and add the marinated tofu. Fry until golden and crispy on all sides, about 5-7 minutes. Remove the tofu and set aside.
In the same skillet, add the broccoli, bell pepper, and snap peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
Add the shelled edamame to the skillet and pour in the remaining marinade. Stir-fry for another 1-2 minutes until everything is heated through.
Return the crispy tofu to the skillet, gently mixing to combine all flavors.
Plate the stir-fry and sprinkle toasted sesame seeds on top before serving.
