INGREDIENTS
4 oz Lean Ground Turkey
1/8 cup Red Lentils (dry)
2 Tbsp Tomato Paste
1 Whole Wheat Slider Bun
1/4 cup Chopped Onion
1/4 cup Chopped Red Bell Pepper
1 Garlic Clove, Minced
1 tsp Chili Powder
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
In a small pot, rinse the red lentils and cook them in water until tender, about 10-12 minutes. Drain any excess water.
In a skillet over medium heat, add the lean ground turkey and cook until it starts to brown.
Add the chopped onion, red bell pepper, and minced garlic to the skillet. Sauté until the vegetables soften, about 3-4 minutes.
Stir in the cooked lentils and tomato paste along with chili powder, smoked paprika, and a pinch of salt and pepper. Mix well and allow the flavors to meld for 3-5 minutes.
Lightly toast the whole wheat slider bun.
Assemble the slider by spooning the turkey and lentil mixture onto the bun. Serve immediately and enjoy your lean, flavorful sloppy joe slider.
