Fudgy Black Bean Brownie Squares
Enjoy a decadently fudgy brownie that cleverly hides powerhouse protein ingredients in every bite. These black bean brownie squares offer a rich chocolate flavor balanced by the natural sweetness of maple syrup and the creaminess of almond butter and Greek yogurt, all while delivering a satisfying protein boost ideal for a balanced meal.
INGREDIENTS
1 can (15 oz) Canned Black Beans
13 large Egg Whites
3 scoops Whey Protein Isolate
1.5 cups Nonfat Greek Yogurt
6 tablespoons Almond Butter
2 tablespoons Chia Seeds
1/4 cup Unsweetened Cocoa Powder
1/3 cup Maple Syrup
PREPARATION
Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper.
Drain and rinse the black beans thoroughly. In a high-speed blender, combine the black beans, egg whites, nonfat Greek yogurt, maple syrup, almond butter, and cocoa powder. Blend until completely smooth.
Add the whey protein isolate and chia seeds into the mixture and pulse briefly until just mixed in. Do not over-blend to preserve some texture from the chia seeds.
Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean. The brownies will continue to set as they cool.
Allow the pan to cool completely on a rack. Once cooled, cut into 6 even squares.
Enjoy one square per serving to achieve approximately 315 kcals and over 31 grams of protein, making them a satisfying option for breakfast, lunch, or dinner.
