PREPARATION
Preheat your oven to 400°F.
Thinly slice the onion and mince the garlic. In a skillet over medium heat, add 1 tsp of olive oil and sauté the onions slowly until they become soft and caramelized, about 10-12 minutes. Add garlic in the last 2 minutes of cooking.
Meanwhile, pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
