INGREDIENTS
4 oz Chicken Breast
1/2 medium Yellow Onion (sliced)
1/2 tbsp Olive Oil
1/8 cup Whole Wheat Breadcrumbs
2 tbsp Fresh Herbs (Rosemary, Thyme, Parsley)
Salt and Pepper (to taste)
PREPARATION
Preheat your oven to 400°F.
Thinly slice the half onion and heat a non-stick skillet over medium heat with the olive oil. Sauté the onions until they turn golden and begin to caramelize, about 10-12 minutes; set aside.
Season the chicken breast on both sides with salt and pepper.
In a shallow dish, mix the whole wheat breadcrumbs with the chopped fresh herbs.
Press the chicken breast into the herb and breadcrumb mixture to coat evenly on both sides.
Place the crusted chicken breast on a lightly greased baking dish. Spoon the caramelized onions evenly over the top of the chicken.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.
Let the chicken rest for a few minutes before serving.
