INGREDIENTS
6 oz Lean Ground Turkey (93% lean)
1 small Sweet Potato (approx. 100g)
1/2 Red Bell Pepper
1 cup Spinach
1/4 Yellow Onion
1 tsp Olive Oil
2 tbsp Fresh Parsley
1/2 tsp Dried Thyme
Salt and Pepper to taste
PREPARATION
Prepare the vegetables by dicing the sweet potato into small cubes, chopping the red bell pepper, slicing the onion, and roughly chopping the spinach and parsley.
Heat olive oil in a large skillet over medium heat. Add the diced sweet potato and onion, sautéing until they begin to soften, about 5 minutes.
Add the red bell pepper and continue cooking for another 2 minutes.
Push the vegetables to the side of the skillet and add the lean ground turkey to the cleared space. Season with dried thyme, salt, and pepper as it cooks, breaking it up with a spatula until browned and cooked through, about 6-8 minutes.
Once the turkey is mostly cooked, mix it with the vegetables. Stir in the spinach and parsley, allowing the spinach to wilt slightly.
Adjust seasoning to taste, and serve warm.
