INGREDIENTS
6 oz Salmon Fillet
1/4 cup Whole Wheat Breadcrumbs
1 tbsp Fresh Lemon Juice
1 Garlic Clove
1 tsp Olive Oil
1 tbsp Fresh Parsley (chopped)
1 tbsp Fresh Dill (chopped)
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Pat the salmon dry with paper towels and season lightly with salt and pepper.
In a small bowl, combine the whole wheat breadcrumbs, chopped parsley, and dill. Add a pinch of salt and pepper to the herb mixture.
Brush the top of the salmon fillet with olive oil, then gently press the breadcrumb herb mixture onto the flesh to form a crust.
Place the salmon on a lined baking sheet.
In another bowl, mix the fresh lemon juice and minced garlic together to create the lemon garlic sauce.
Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
Once baked, drizzle the lemon garlic sauce over the salmon and serve immediately.
