Finely dice the raw chicken breast or pulse in a food processor until coarsely ground. Transfer to a bowl.
Peel and finely grate the carrot. Add the carrot to the chicken along with chopped fresh parsley and chives.
Season the chicken mixture with a pinch of salt and pepper. Mix until well combined.
Place a dumpling wrapper on a clean surface and spoon a small amount of the chicken and herb filling onto the center. Repeat with the remaining wrappers.
