PREPARATION
Preheat your oven to 400°F.
Peel (if desired) and dice the sweet potato into small cubes. Place on a baking sheet, drizzle with half of the olive oil, and season with salt and pepper.
Roast the sweet potato in the oven for 15-20 minutes until tender and slightly crisp on the edges.
