Enjoy a vibrant plate featuring perfectly seared salmon, crisp-tender garlic green beans, and a creamy sweet potato mash, all elevated by a drizzle of olive oil. This dish harmonizes flavors and textures for a well-rounded dinner experience that is both nutritious and satisfying.
INGREDIENTS
6 ounces Salmon Fillet
1 cup Fresh Green Beans
1.5 medium Sweet Potato
2 tablespoons Extra Virgin Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat and add one tablespoon of olive oil.
Season the salmon fillet with salt and pepper.
Place the salmon in the hot skillet and sear for 3-4 minutes per side until a golden crust forms and the interior reaches your desired doneness. Remove from the skillet and let rest.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the green beans and a splash of water, stirring occasionally, until they are crisp-tender, about 4-5 minutes. Season with a pinch of salt and pepper.
Meanwhile, peel and cube the sweet potato. Boil in lightly salted water until tender, about 10-12 minutes.
Drain the sweet potatoes and return them to the pot. Add the remaining tablespoon of olive oil and mash until smooth. Season with salt and pepper to taste.
Plate the dish by placing a portion of sweet potato mash on the plate, topping it with the seared salmon, and arranging the garlic green beans on the side.
