INGREDIENTS
250g Extra Firm Tofu
1/2 cup Shelled Edamame
200g Broccoli
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 tsp grated Fresh Ginger
1 clove Garlic, minced
1 tbsp Cornstarch
1 tsp Olive Oil
PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Preheat the oven to 425°F (220°C). In a separate bowl, toss broccoli with olive oil, salt, and pepper.
Spread the broccoli on a baking sheet and roast for 20-25 minutes until tender and slightly crispy on the edges.
While broccoli roasts, heat sesame oil in a non-stick pan over medium heat. Add the tofu cubes and sauté until all sides are golden and crispy, about 7-8 minutes.
Add the minced garlic and grated ginger to the tofu and sauté for another 1-2 minutes until fragrant.
Stir in soy sauce and sprinkle with sesame seeds, ensuring the tofu is well-coated in the savory glaze.
Gently fold in the shelled edamame, warming them through for about 1 minute.
Plate the crispy tofu and edamame mixture alongside the roasted broccoli, and serve warm.
