PREPARATION
Preheat your oven to 400°F (200°C).
Slice the top off the red bell pepper and remove the seeds and membranes.
In a bowl, combine the minced chicken, diced potato, diced tomato, egg white, and chopped fresh herbs. Season with salt and pepper. Mix thoroughly.
Stuff the bell pepper with the chicken mixture, pressing gently to compact the filling.
