INGREDIENTS
5 oz Smoked Salmon
1/4 cup Whole Wheat Breadcrumbs
2 tbsp Fresh Herbs (Dill & Parsley)
1 tsp Lemon Zest
1/2 medium Avocado
2 oz Nonfat Greek Yogurt
1 tsp Lime Juice
Pinch of Salt and Pepper
PREPARATION
Preheat your oven broiler to high.
In a small bowl, combine whole wheat breadcrumbs, fresh herbs, lemon zest, a pinch of salt, and pepper.
Lay the smoked salmon on a baking sheet lined with parchment paper. Gently press the herb and breadcrumb mixture onto the top of the salmon to create a crust.
Place the salmon under the broiler for 2-3 minutes, just until the crust becomes slightly toasted and fragrant. Keep a close eye to avoid burning.
While the salmon is broiling, scoop the avocado flesh into another bowl. Add nonfat Greek yogurt and lime juice, then mash together until creamy but still a bit chunky. Season with a pinch of salt and pepper to taste.
Remove the salmon from the oven and serve immediately with a generous dollop of the creamy avocado mash alongside or on top of the salmon.
