1 cup Cauliflower Rice

PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, salt, and pepper.
Place the chicken breast on a baking sheet and brush the herb-lemon mixture evenly over it.
Roast the chicken in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the outside is lightly browned.
