INGREDIENTS
6 oz Salmon Fillet
5 spears Fresh Asparagus
1/2 medium Sweet Potato
1/3 cup Nonfat Greek Yogurt
1 tsp Olive Oil (for searing)
1/2 tsp Olive Oil (for mash)
Salt, Pepper & Garlic Powder to taste
PREPARATION
Preheat a nonstick skillet over medium-high heat and add 1 teaspoon of olive oil.
Season the salmon fillet with salt, pepper, and garlic powder.
Place the salmon in the skillet skin-side down and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
Meanwhile, peel (if desired) and chop the sweet potato into chunks. Boil or steam the sweet potato pieces until soft, about 10-12 minutes.
Drain the sweet potato and mash it with a fork or potato masher. Stir in 1/3 cup of nonfat Greek yogurt and 1/2 teaspoon of olive oil, seasoning with salt, pepper, and a pinch of garlic powder to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of sweet potato mash, and serve immediately.
