INGREDIENTS
4 oz Chicken Breast
1 Large Egg
1/4 Avocado
1 cup Mixed Greens
1/2 cup Cherry Tomatoes (halved)
2 tbsp Fresh Herbs (Parsley & Basil)
1 tsp Olive Oil
PREPARATION
Preheat your oven to 425°F.
Season the chicken breast with salt and pepper. Place it on a baking tray lined with parchment paper.
Bake the chicken for 18-20 minutes until it’s cooked through and the exterior turns crispy. Allow it to cool slightly before slicing.
While the chicken is baking, hard boil the egg by placing it in a saucepan, covering with water, and simmering for 9-10 minutes. Cool the egg in cold water, then peel and slice.
In a bowl, mix the fresh mixed greens and halved cherry tomatoes.
Dice the avocado and add to the greens along with the sliced egg.
Slice the cooled chicken and add to the bowl.
Drizzle with olive oil, sprinkle over the fresh herbs, and toss lightly to combine.
Season with additional salt and pepper to taste before serving.
