This dish delivers a beautiful balance of flavors and textures that satisfy your savory cravings while staying in line with your nutritional goals.
INGREDIENTS
5 oz Lean Ground Beef
1 medium Sweet Potato
1/2 medium Bell Pepper
1/4 medium Onion
1 large Egg
2 tsp Mixed Spices (Cumin, Paprika, Garlic Powder, Salt & Pepper)
1 tsp Olive Oil
PREPARATION
Peel and grate the sweet potato to create a rice-like texture, and finely dice the bell pepper and onion.
Heat the olive oil in a non-stick skillet over medium heat. Sauté the diced onion and bell pepper until softened, about 3-4 minutes.
Add the lean ground beef to the skillet and break it apart. Cook until the beef is browned, about 5-6 minutes, then stir in the spices.
Once the beef is nearly cooked, mix in the grated sweet potato. Cover the skillet and let it steam for 4-5 minutes until the sweet potato rice is tender.
In a separate small pan, lightly fry the egg to your preferred doneness (sunny side up works great).
Assemble the bowl by placing the beef and sweet potato mixture as a base and topping with the fried egg. Season with extra salt and pepper if desired and serve warm.
