INGREDIENTS
4 oz Chicken Breast
1 cup Cauliflower
1 cup cooked Whole Wheat Pasta
1/2 cup Unsweetened Almond Milk
2 tbsp Nutritional Yeast
2 cloves Garlic
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Season the chicken breast lightly with salt and pepper. In a skillet, heat the olive oil over medium heat and cook the chicken for about 6-7 minutes per side until golden and fully cooked. Remove and set aside.
Steam or boil the cauliflower until very tender, about 8-10 minutes.
While the cauliflower is cooking, bring a pot of water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
In a blender, combine the cooked cauliflower, unsweetened almond milk, nutritional yeast, and garlic. Blend until smooth to create a creamy sauce. If needed, add a little water to reach your desired consistency.
Slice the chicken breast into strips. Return the pasta to the pot over low heat, pour in the creamy cauliflower sauce, and stir to combine.
Fold in the sliced chicken, season with additional salt and pepper if desired, and warm through for a couple of minutes.
Serve immediately and enjoy your Creamy Cauliflower Alfredo Chicken Pasta.
