Savor tender, seared salmon paired with crisp garlic green beans and a silky cauliflower mash enriched with a touch of creamy Greek yogurt. A delightful harmony of flavors and textures that delivers a balanced and satisfying dining experience.
INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower Florets
1/2 cup Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for about 3-4 minutes per side until nicely browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add a splash of olive oil and sauté the minced garlic until fragrant. Toss in the green beans and cook for 4-5 minutes until tender-crisp. Season with salt and pepper and set aside.
Steam the cauliflower florets until very tender, approximately 8-10 minutes.
Transfer the steamed cauliflower to a bowl and mash with a fork or immersion blender. Stir in the Greek yogurt and a teaspoon of olive oil for extra creaminess. Season with salt and pepper to taste.
Plate the cauliflower mash as a base, top with the seared salmon, and arrange the garlic green beans alongside. Serve immediately.
