INGREDIENTS
6 oz Salmon Fillet
1 cup Steamed Asparagus
1 cup Cauliflower
1/2 tbsp Olive Oil (for mash)
1 tsp Olive Oil (for drizzle)
1/4 Lemon
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the salmon dry with a paper towel and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp olive oil.
Place the salmon fillet skin-side down (if applicable) in the skillet and sear for about 3-4 minutes until a crispy crust forms.
Flip the salmon and cook for another 3-4 minutes, until the fish is just cooked through. Squeeze fresh lemon juice over the fillet during the last minute of cooking.
Meanwhile, steam the asparagus until tender, about 4-5 minutes, and steam the cauliflower until soft, about 8-10 minutes.
Once the cauliflower is steamed, transfer to a bowl and add 1/2 tbsp olive oil, salt, and pepper. Mash until smooth and creamy.
Plate the seared salmon with a side of steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
