Enjoy a vibrant twist on a classic quesadilla with juicy lime-marinated steak, sautéed bell peppers, and a sprinkle of reduced-fat cheese sandwiched in a whole wheat tortilla. This dish brings a perfect balance of tangy freshness and savory satisfaction, ideal for a wholesome meal at any time.
INGREDIENTS
4 oz Lean Sirloin Steak
1 Whole Wheat Tortilla
1/2 cup diced Bell Pepper
1/4 cup Reduced-Fat Shredded Cheese
1 tbsp Lime Juice
1 tsp Olive Oil
1/2 tsp Cumin Powder
Salt & Pepper to taste
PREPARATION
In a bowl, combine lime juice, olive oil, cumin powder, salt, and pepper. Add the steak and coat well. Let it marinate for at least 20 minutes.
Heat a skillet over medium-high heat and cook the marinated steak for about 3-4 minutes per side until medium-rare or desired doneness. Remove and thinly slice the steak.
In the same skillet, lightly sauté the diced bell pepper until just tender.
Place the whole wheat tortilla in the skillet over low heat. Sprinkle half of the shredded cheese evenly on one half of the tortilla, add sliced steak and sautéed bell peppers, then sprinkle the remaining cheese on top.
Fold the tortilla in half to cover the filling and press gently with a spatula. Cook until the tortilla is golden brown and the cheese has melted, about 2-3 minutes per side.
Remove from the skillet, slice into wedges, and serve immediately.
