1/4 medium red bell pepper (diced, 30g)
1/8 small red onion (diced, 15g)
Juice of 1 lime
Fresh cilantro (a few sprigs)
Salt & pepper to taste
PREPARATION
Prepare the cooked quinoa according to package instructions and let it cool slightly.
Rinse and drain the cooked black beans.
If not already done, shell the edamame and lightly steam them for 2-3 minutes to soften.
Dice the red bell pepper and red onion, and roughly chop the fresh cilantro.
In a large bowl, combine the quinoa, black beans, edamame, diced red bell pepper, red onion, and grilled chicken.
