INGREDIENTS
150g Cauliflower
2 Large Eggs
10g Grated Parmesan Cheese
1/4 cup Tomato Sauce
1/2 cup Part-Skim Mozzarella Cheese
30g Turkey Pepperoni
1 tsp Dried Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Grate the cauliflower finely or pulse it in a food processor until it resembles rice. Steam or microwave the cauliflower lightly until just tender, then allow it to cool.
In a bowl, combine the cauliflower with two lightly beaten eggs and the grated Parmesan cheese. Season with a pinch of salt, pepper, and dried oregano.
Transfer the mixture onto the lined baking sheet and press it into a thin, even circle to form your crust.
Bake the crust in the preheated oven for about 15 minutes, or until it starts to turn golden and firm up.
Remove the crust from the oven and spread the tomato sauce evenly over it. Sprinkle the part-skim mozzarella cheese on top and arrange the turkey pepperoni slices evenly.
Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
Remove from the oven, let it cool slightly, slice, and serve warm.
