INGREDIENTS
250g Extra Firm Tofu
100g Shelled Edamame
1 cup Chopped Broccoli
1/2 cup Sliced Carrots
1/2 cup Cooked Brown Rice
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Maple Syrup
2 cloves Garlic, minced
1 tsp Fresh Ginger, minced
1 tsp Cornstarch
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess liquid, then cut it into bite-sized cubes.
Place the tofu cubes in a bowl, sprinkle with cornstarch, and gently toss to coat evenly.
Heat half the sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides are golden and crispy, about 6-8 minutes. Remove tofu from the pan and set aside.
In the same skillet, add the remaining sesame oil, minced garlic, and ginger. Sauté until fragrant, about 30 seconds.
Mix in the soy sauce and maple syrup to create the glaze. Return the crispy tofu to the skillet and toss well to coat with the glaze.
In a separate bowl, combine the cooked edamame, chopped broccoli, sliced carrots, and cooked brown rice.
Top the vegetable and rice bowl with the glazed tofu and sprinkle with sesame seeds.
Serve immediately and enjoy your balanced, crispy tofu bowl.
