6 oz Salmon Fillet
1/4 cup Raw Pistachios (unsalted)
2 Tbsp Fresh Orange Juice
1 tsp Fresh Ginger, grated
1 tsp Raw Honey
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel and season lightly with salt and pepper.
In a small bowl, combine the fresh orange juice, grated ginger, and honey to form the citrus-ginger glaze.
Brush a thin layer of the glaze over the top of the salmon fillet.
Place the raw pistachios in a food processor and pulse lightly until coarsely chopped. Do not over-process as you want some crunch.
Press the chopped pistachios onto the glazed side of the salmon so they adhere well.
Place the salmon on the prepared baking sheet, glaze side up.
