INGREDIENTS
6 oz Ground Turkey (170g)
1 large Egg White (30g)
1 cup Cooked Brown Rice (195g)
1 tsp Olive Oil (4.5g)
2 Garlic Cloves
1/2 Lemon (juiced)
1 tbsp Fresh Parsley (chopped)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine the ground turkey, egg white, chopped parsley, and a pinch of salt and pepper. Mix well to incorporate all the ingredients evenly.
Form the mixture into small, evenly sized meatballs.
Place the meatballs on a lightly greased baking sheet and roast in the preheated oven for 15-20 minutes, or until fully cooked and lightly browned on the outside.
While the meatballs are baking, prepare the lemon garlic rice. In a small pan, heat the olive oil over medium heat.
Add minced garlic to the oil and sauté briefly until fragrant, being careful not to burn it.
Stir in the cooked brown rice and drizzle in the juice of half a lemon. Season with a little salt and pepper.
Toss the rice to ensure it is evenly coated with the garlic and lemon, and heat through for about 3-4 minutes.
Plate the roasted turkey meatballs alongside the lemon garlic rice and serve warm.
