INGREDIENTS
4 oz Ground Turkey (93% lean)
2 oz Extra Ground Turkey (93% lean)
1 medium Bell Pepper
1/4 cup cooked Brown Rice
1/4 cup chopped Onion
1/2 cup Diced Tomatoes
1 tsp Olive Oil
1/2 tsp Garlic Powder
1/2 tsp Dried Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove seeds and membranes.
In a skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until softened, about 2-3 minutes.
Add the ground turkey along with the extra ground turkey to the skillet. Cook, stirring occasionally, until browned and thoroughly cooked, about 5-7 minutes.
Stir in the garlic powder, dried oregano, salt, and pepper. Mix in the chopped onions if not already fully integrated.
Add the diced tomatoes and cooked brown rice, stirring to combine well. Let the mixture simmer for 2-3 minutes to meld the flavors.
Stuff the bell pepper with the turkey and rice mixture, packing it in firmly.
Place the stuffed bell pepper in a baking dish and cover with foil. Bake in the oven for 20-25 minutes until the pepper is tender.
Remove the foil and, if desired, broil for an additional 2-3 minutes for a slightly charred top. Serve hot.
