A hearty and flavorful hash featuring tender roasted sweet potatoes glazed in maple, complemented by savory turkey sausage and lightly scrambled eggs. Finished with a sprinkle of crunchy pecans, this dish balances sweet and savory beautifully for a satisfying meal any time of day.
INGREDIENTS
1 medium Sweet Potato (150g)
4 ounces Turkey Sausage (113g)
2 large Eggs
1/8 cup chopped Pecans (15g)
1 tablespoon Maple Syrup
1 teaspoon Olive Oil
1 small Red Onion
1 medium Bell Pepper
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel (if desired) and dice the sweet potato into small cubes. Dice the red onion and bell pepper into similar sized pieces.
In a bowl, toss the sweet potato cubes with olive oil, maple syrup, salt, and pepper.
Spread the sweet potato evenly on a baking tray and roast for about 20-25 minutes, stirring halfway through until tender and lightly caramelized.
While the sweet potato roasts, slice the turkey sausage into rounds and cook in a skillet over medium heat until nicely browned. Remove and set aside.
In a separate pan, lightly scramble the eggs until just set.
Once the sweet potato is roasted, combine it with the red onion, bell pepper, sausage, and scrambled eggs. Gently stir to mix the flavors.
Plate the hash and top with chopped pecans for added crunch and a nutty finish.
Adjust salt and pepper to taste and serve warm.
