Enjoy a tropical twist on a classic fish dish. Tender mahi mahi is encrusted in a light coconut crust and paired with a zesty, fresh mango salsa. The dish offers a perfect balance of lean protein and vibrant flavors that work beautifully whether served for breakfast, lunch, or dinner.
INGREDIENTS
6 oz Mahi Mahi Fillet
2 tbsp Unsweetened Shredded Coconut
1 large Egg
1/2 Mango
1 tbsp minced Red Onion
1 tbsp chopped Fresh Cilantro
1 tbsp Lime Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Season the mahi mahi fillet lightly with salt and pepper.
In a shallow bowl, whisk the egg until well combined.
In another bowl, place the shredded coconut. Dip the fillet first into the egg, then coat evenly with the shredded coconut.
Place the coated fillet on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
While the fish bakes, prepare the mango salsa by dicing the mango and combining it with the minced red onion, chopped cilantro, and lime juice. Mix gently and season with a pinch of salt.
Once the mahi mahi is done, plate the fish and top with a generous spoonful of mango salsa. Serve immediately and enjoy.
