INGREDIENTS
5 oz Lean Ground Turkey
1 cup Cauliflower
1 small Carrot
1/3 cup Peas
1/4 medium Onion
1 tbsp Tomato Paste
1/2 cup Low-Sodium Chicken Broth
2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a large skillet, warm 2 teaspoons of olive oil over medium heat. Add the chopped onion and grated carrot, and sauté until softened, about 3-4 minutes.
Add the lean ground turkey to the skillet. Cook until browned, breaking it up with a spoon. Once cooked, stir in the tomato paste and low-sodium chicken broth, and season with salt and pepper. Let simmer for another 3 minutes.
Meanwhile, steam the cauliflower until tender, about 8-10 minutes. Once cooked, mash the cauliflower with a fork or potato masher until smooth. Adjust seasoning with additional salt and pepper if desired.
Transfer the turkey and vegetable mixture into an oven-safe dish and spread evenly. Top with the mashed cauliflower, smoothing the surface.
Bake in the preheated oven for 12-15 minutes until the top is slightly golden. Remove from the oven and let it rest for a few minutes before serving.
