The dish is finished with a drizzle of olive oil and garnished with fresh parsley and dill, creating a bright, aromatic meal that’s satisfyingly balanced in protein and flavor.
INGREDIENTS
4 oz Salmon Fillet
3 oz Shrimp
1 tsp Olive Oil
2 tbsp Lemon Juice
1 clove Garlic
1 tbsp Fresh Parsley
1 tbsp Fresh Dill
PREPARATION
Preheat your oven to 400°F.
In a small bowl, combine half of the lemon juice, minced garlic, fresh parsley, and dill with a drizzle of olive oil. Set aside half of the mixture for the shrimp and the other half for the salmon crust.
Place the salmon fillet on a baking sheet lined with parchment paper. Brush the top of the salmon generously with the herb mixture and let it marinate for 5 minutes.
Meanwhile, in another bowl, toss the shrimp with the remaining lemon juice and a pinch of salt and pepper.
Place the salmon in the oven and bake for about 12-15 minutes or until it flakes easily with a fork.
While the salmon is baking, sauté the shrimp in a non-stick pan over medium-high heat for 2-3 minutes per side until they turn pink and are cooked through.
Plate the salmon and shrimp together, drizzle any remaining pan juices over the top, and serve immediately.
