INGREDIENTS
4 ounces Chicken Breast
1 cup Cauliflower Rice
1/2 medium Red Bell Pepper
1/2 cup Broccoli
1 clove Garlic
1 teaspoon Sesame Oil
1 tablespoon Low Sodium Soy Sauce
1 teaspoon Extra Sesame Oil
PREPARATION
Start by cutting the chicken breast into bite-sized pieces and set aside.
Chop the red bell pepper and broccoli into similarly sized pieces. Mince the garlic.
Heat 1 teaspoon of sesame oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the skillet and stir-fry until lightly browned and cooked through, about 5-7 minutes.
Push the chicken to one side of the skillet and add the minced garlic. Sauté for 30 seconds until fragrant.
Add the red bell pepper, broccoli, and cauliflower rice into the skillet. Stir-fry together with the chicken.
Drizzle in 1 tablespoon of low sodium soy sauce and an extra teaspoon of sesame oil. Mix well and continue stir-frying for another 3-4 minutes until the vegetables are crisp-tender.
Taste and adjust seasonings if necessary, then serve hot.
