INGREDIENTS
300g Firm Tofu
100g Broccoli
80g Red Bell Pepper
50g Snap Peas
50g Carrot
50g Shelled Edamame
1 tbsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 clove Garlic, minced
1 tsp Ginger, minced
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess water. Cut the tofu into 1-inch cubes and lightly toss with a small amount of cornstarch for extra crispiness (optional).
In a large non-stick skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add the tofu cubes and stir-fry until they begin to turn golden and crispy on all sides, about 4-5 minutes.
Add the broccoli, red bell pepper, snap peas, and carrot to the skillet. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
Mix in the shelled edamame and drizzle the low sodium soy sauce along with rice vinegar. Toss everything together to ensure even coating of the sauce.
Continue cooking for another 1-2 minutes to heat through. Remove from heat and sprinkle with sesame seeds before serving.
