INGREDIENTS
75 g Dry Green Lentils
100 g Extra Firm Tofu
1 medium Carrot
1 Celery Stalk
1 small Onion
2 cloves Garlic
1/2 cup Diced Tomatoes (No Salt Added)
1 cup Low-Sodium Vegetable Broth
1 teaspoon Olive Oil
1 teaspoon Smoked Paprika
1 teaspoon Dried Thyme
1 Bay Leaf
Salt and Black Pepper to taste
PREPARATION
Rinse the dry green lentils and drain well. Cube the extra firm tofu, and dice the carrot, celery, and onion. Mince the garlic.
Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant.
Stir in the chopped carrot and celery, and cook for a few minutes until they begin to soften.
Add the dry lentils and tofu cubes to the pot, then pour in the low-sodium vegetable broth and diced tomatoes.
Season with smoked paprika, dried thyme, and add the bay leaf. Stir to combine all the ingredients.
Bring the mixture to a simmer, then reduce heat to low. Cover and let cook for about 25-30 minutes, or until the lentils are tender and flavors have melded together.
Remove the bay leaf, taste and adjust seasoning with salt and black pepper as needed. Serve warm and enjoy your nourishing stew.
