Savor the delightful fusion of a perfectly pan seared herb-crusted salmon paired with a medley of roasted broccoli and red bell pepper. This dish is both vibrant and balanced, offering a crisp exterior on the salmon while the roasted vegetables add a natural sweetness and satisfying crunch.
INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli
1 small Red Bell Pepper
1 teaspoon Olive Oil
1 tablespoon Mixed Fresh Herbs (Parsley & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Pat the salmon fillet dry and season both sides with a pinch of salt, pepper, and the chopped mixed fresh herbs.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once shimmering, add the salmon fillet skin-side down if applicable. Sear for 2-3 minutes until a golden crust forms.
Gently flip the salmon and sear the other side for another 2 minutes.
While the salmon is searing, toss the broccoli and red bell pepper in a small amount of olive oil, salt, and pepper, and spread them on a baking tray.
Place the tray with vegetables in the oven and roast for 8-10 minutes until tender and slightly charred.
If the salmon needs additional cooking after searing, transfer it to the oven for 4-5 minutes.
Plate the salmon alongside the roasted vegetables and serve immediately.
