INGREDIENTS
300g Cauliflower Florets
125g Silken Tofu
1/4 cup Nutritional Yeast
1 cup Chickpeas (canned, drained & rinsed)
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the chickpeas with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread them out on a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes until crispy, stirring halfway through.
Meanwhile, steam or boil the cauliflower florets until they are very tender, about 10 minutes.
In a blender, combine the steamed cauliflower, silken tofu, nutritional yeast, a pinch of salt, and a dash of pepper until smooth and creamy, adjusting seasoning to taste. This will serve as your 'mac' sauce.
Pour the cauliflower sauce into a baking dish, and gently fold in any remaining cauliflower pieces for texture if desired.
Once the chickpeas are crispy, sprinkle them evenly on top of the cauliflower sauce in the dish.
Return the dish to the oven and bake for an additional 8-10 minutes to allow flavors to meld.
Serve warm as a satisfying dish that combines a creamy, cheesy texture with a crunchy, roasted chickpea topping.
