INGREDIENTS
6 ounces Prawns
1.5 cups Cauliflower Rice
2 tablespoons Olive Oil
2 cloves Garlic, minced
Juice and zest of 1 Lemon
1 tablespoon Fresh Parsley, chopped
Salt and Pepper, to taste
PREPARATION
Pat the prawns dry with a paper towel and season lightly with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Add the prawns to the skillet and cook for 2-3 minutes per side until they turn pink and opaque. Remove the prawns and set aside.
In the same skillet, add the remaining olive oil and then incorporate the cauliflower rice.
Sauté the cauliflower rice for about 4-5 minutes, stirring occasionally until tender, then stir in the lemon juice, lemon zest, and chopped parsley.
Plate the herb cauliflower rice and top with the pan-seared prawns.
Finish with an extra sprinkle of parsley and a squeeze of fresh lemon juice if desired.
