INGREDIENTS
6 ounces Shrimp (raw)
1 cup Cauliflower (riced)
2 tablespoons Olive Oil
2 cloves Garlic (minced)
1 Lemon (juiced and sliced)
2 tablespoons Fresh Parsley (chopped)
Salt and Pepper, to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Place the shrimp in the skillet and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.
In the same skillet, add the remaining olive oil and add the riced cauliflower. Sauté for about 4-5 minutes until tender.
Stir in the lemon juice and chopped parsley into the cauliflower rice. Season with salt and pepper to taste.
Return the shrimp to the skillet briefly to combine with the cauliflower rice, or serve shrimp atop the rice.
Garnish with lemon slices and additional parsley if desired, then serve immediately.
